UTAH FARMSTEAD GOULASH
1 lb ground beef
1 medium white onion diced
2 tsp minced garlic
1 quart (32 oz) whole stewed tomatoes
1 pint (16 oz) tomato juice
1 tsp dried thyme
2 bay leaves
1/2 tsp black pepper
2 cups elbow macaroni cooked
salt to taste
Cook the ground beef and onions together in the bottom of a large soup pot until the ground beef is cooked and the onions are translucent. Add in the garlic and cook until brown.
Stir in the tomatoes, tomato juice, bay leaves, thyme, and pepper. Salt to taste.
Simmer the soup on medium heat until the meat has softened, and soup has warmed (about 15 to 20 minutes).
Remove the bay leaves. Stir in the cooked macaroni cook until warmed through. Ladle into bowls and serve.
